10 Frozen Homemade Treats to Beat the Heat

Summer is here and it is hot! There are so many ways that you can keep cool during the summer months though. One way is to make your own frozen homemade treats! They are easy to make and will help you cool down after being in the sunshine for a long period.

Chocolate Banana Pops

One of the easiest homemade frozen treats to make is chocolate banana pops. It will take you roughly 3 hours to make these.

Ingredients

  • 2 cups soy milk
  • 1 box (4-serving size) vanilla instant pudding and pie filling mix
  • 2 ripe medium bananas, mashed
  • 1 box (4-serving size) chocolate instant pudding and pie filling mix
  • 12 paper cups (3-oz size)
  • 12 craft sticks (flat wooden sticks with round ends).

Instructions

  • Grab a small bowl and  gradually add 1 cup of soy milk to vanilla pudding mix
  • Beat  until well blended
  • Stir in the mashed bananas
  • In another bowl,  add remaining soy milk to chocolate pudding mix
  • Beat until well blended
  • Spoon half of the banana mixture into cups
  • Layer chocolate mixture over banana mixture
  • Spoon remaining banana mixture into cups; stir slightly to marble
  • Insert sticks; freeze about 3 hours or overnight until firm. To serve, remove cups.

Strawberry-Peach Pops

Ingredients

  • 1 cup soy milk
  • 1 cup frozen strawberries
  • 1 container (6 oz) 99% Fat Free harvest peach yogurt
  • 2 tablespoons honey
  • 10paper cups (3-oz size)
  • 10 craft sticks.

Instructions

  •  Place soymilk, strawberries, yogurt and honey in blender or food processor, blend on high speed for 1 minute or until smooth.
  • Fill each cup with about 1/4 cup yogurt mixture
  • Place cups in freezer until partially frozen, about 45 minutes
  • Insert sticks; freeze until firm, about 1.5 hours
  • To serve, remove the cups

Strawberry Sorbet

Ingredients

  • 2 cups chopped strawberries
  • 1 cup cold water
  • 2 cups boiling water
  • 1 pkg. (4-serving size) JELL-O Strawberry Flavor Gelatin
  • 1/2 cup  of sugar

Instructions

  • Blend the strawberries until they are smooth
  • Stir the boiling water into the JELL-O mix and add the strawberry mixture
  • Pour into a 9 inch pan and freeze for an hour to an a hour and a half
  • Spoon in half of the gelatin mixture and add it to the frozen product. Let the sorbet chill for 6 hours or overnight to make it firm

Homemade Orange Popsicles

Ingredients

  • 1 (3 ounce) package of orange JELL-O mix
  • 1 cup of white sugar
  • 1 cup boiling water
  • 1 unsweetened orange soft drink mix packet

Instructions

  • In a large pitcher, combine gelatin, soft drink mix, sugar and boiling water
  • Stir until powders are dissolved. Add enough cold water to make 2 quarts
  • Pour into 3 oz. paper drinking cups and freeze until hardened

Watermelon Popsicles

Ingredients

  • 1 cup of sugar
  • 1 (3 ounce) package of lime JELL-O
  • 2 cups boiling water
  • Ice Cubes
  • 1 cup cold water
  • 1 (3 ounce) Strawberry JELL-O package
  • 3 tablespoons miniature semi-sweet chocolate chips
  • 4 ounces PHILADELPHIA cream cheese, softened
  • 1 1/2 cups thawed COOL WHIP Whipped Topping

Instructions

  • Mix 1/3 cup sugar and lime gelatin mix in medium bowl
  • Add 1 cup boiling water
  • Stir 2 min. until completely dissolved
  • Add enough ice to 1/2 cup cold water to measure 3/4 cup
  • Add to lime gelatin; stir until ice is completely melted
  • Refrigerate 25 min
  • Repeat Step 1 using strawberry gelatin mix and omitting the refrigeration step
  • Pour into 16 (3-oz.) paper cups
  • Freeze for 20 min
  • Stir 1/2 tsp. chocolate chips into gelatin in each cup
  • Beat cream cheese and remaining sugar with mixer in medium bowl until well blended
  • Stir in COOL WHIP; spread over gelatin in cups
  • Pour lime gelatin over cream cheese mixture
  • Insert wooden pop stick into gelatin in center of each cup
  • Freeze for 3 hours or until firm
  • Remove pops from cups just before serving

Peanut Butter Pudding Pops

Ingredients

  • 1 1/2 cups of whole milk
  • 3 tablespoons of white sugar
  • 2 tablespoons of cornstarch
  • 1 pinch of salt
  • 1 teaspoon vanilla extract
  • 3/4 cup of peanut butter

Instructions

  • Heat milk until bubbles form at edges
  • In a bowl, combine sugar, cornstarch and salt
  • Add 1/4 cup of the hot milk to the cornstarch mixture, then whisk well until all the liquid is incorporated and there are no lumps
  • Pour the cornstarch mixture into the milk, whisking to combine
  • Continue to cook and stir until mixture thickens enough to coat the back of a metal spoon, about 8 to 10 minutes
  • Do not boil
  • Remove from heat, stir in vanilla extract and peanut butter
  • Pour the pudding into the pop molds to within 1/4 of the top, leaving room for the pudding to expand
  • Place the tops on the mold and freeze until frozen solid, about 4 hours
  • To remove from molds, run under hot water to slightly melt the side of the pudding pop, then twist the stem top and remove

Tropical Creamy Pops

Ingredients

  • About 1 1/2 cups of cubed mango, fresh or frozen
  • 1 large banana
  • 1/2 cup of full fat, unsweetened coconut milk
  • 1/2 cup of water, plus more if needed or desired

Instructions

  • Place all of the ingredients into a blender and blend until smooth
  • Scrape down the sides as needed and add water to thin down as desired

Homemade Ice Cream

Ingredients

  • 2 egg yolks
  • 1/2 cup maple syrup
  • 2 cups of heavy cream
  • 1 cup of whole milk
  • 2 tsp. vanilla extract

Instructions

  • Combine ingredients in a large bowl
  • Once they are well-combined, transfer the mixture to your ice cream maker and mix according to the manufacturer’s directions
  • After churning the ice cream, place it in the freezer to solidify it
  • Make sure it is stored in an airtight container to keep from getting freezer burn

Golden Pineapple Granita

Ingredients

  • 1 whole pineapple
  • 1/4 cup lime juice
  • 2 tablespoons of honey.

Instructions

  • Using a large sharp knife, cut off the bottom stem end and the green top crown of the pineapple
  • Stand the pineapple on one end; cut off the peel in strips by slicing from top to bottom
  • With the peeled pineapple standing on one end, cut it into four pieces by cutting from top to bottom
  • Cut the fruit away from the core on each piece; discard core.
  • Chop pineapple
  • Place chopped pineapple in a blender or food processor; add lime juice and honey
  • Cover and blend or process about 2 minutes or until completely smooth
  • Press through a strainer. (You should have about 1-2/3 cups of strained fruit juice mixture.)
  • Pour juice mixture into a shallow baking dish
  • Freeze for at least 4 hours or until firm
  • Break frozen mixture into large chunks
  • Transfer frozen chunks to a chilled large bowl
  • Beat with an electric mixer on low to medium speed until smooth but not melted
  • Return mixture to baking dish
  • Cover and freeze for at least 3 hours or until firm
  • To serve, let stand at room temperature for 5 minutes
  • Scoop into chilled dessert dishes

Lemon-Avocado Sherbert

Ingredients

  • 1 large avocado, halved, seeded, peeled, and cut up
  • 1 cup of half and half
  • 2/3 cup of powdered sugar
  • 1/2 teaspoon finely shredded lemon peel
  • 1/3 cup of lemon juice

Instructions

  • In a blender, combine avocado, half-and-half, powdered sugar, finely shredded lemon peel, and lemon juice
  • Cover and blend until smooth
  • Pour avocado mixture into a 2-quart square baking dish.
  • Cover and freeze for at least 4 hours or until firm.
  • To serve, let stand at room temperature for 15 minutes. Cut into squares and divide among serving bowls.
